🍳 Kitchen Note: Induction vs. Standard

My kitchen runs on a GE Induction Cooktop, so I list specific numeric heat levels (1-10) to take the guesswork out of temperature control.

  • If you use Induction: You know the drill—these numbers are precise!
  • If you use Gas or Electric: Simply follow the description in parentheses (e.g., Medium-High).
  • Note on Speed: Induction heats pans instantly. If you are using electric, give your pan an extra minute or two to preheat!

💰 Financial Breakdown: The $95.67 Survival Strategy

Feeding a family of 4 high-quality, organic meals for less than the cost of two nights of takeout.

  • Total Dinner Spend: $95.67 (Actual cost including chicken weight adjustment)
  • Start-From-Scratch Total: ~$117.47 (Estimated cost if buying all items including pantry staples)
  • Cost Per Person/Per Meal: $3.42 (Actual) to $4.19 (From Scratch)

Why this works: Utilizing Aldi’s Simply Nature organic line saves approximately 30–40% compared to traditional organic retailers. By “shopping your pantry” first, you keep your weekly grocery bill under $100.

🥗 The Sunday Set-Up: 30 Minutes to Peace

This step is completely optional, but knocking it out now is a huge time saver for your busy week ahead!

  1. The “Big Chop” (20 Mins): Dice your 1 Large Bag of Organic Carrots, 3-4 Onions, and 1 Bag of Organic Potatoes all at once.
    • Storage: Divide into two containers. Submerge potatoes in cold water to prevent browning.
  2. Green Bean Prep (5 Mins): If you bought fresh organic beans, wash and trim. If frozen, skip!
  3. The Meatball Hack (3 Mins): Mix 1 lb of your Organic Grass-Fed Ground Beef with 1 tsp Organic Italian Seasoning, plus salt and pepper. Roll into bite-sized balls and store raw in a sealed container for Thursday’s dinner.

Prep Time 5 minutes

Ingredients

  • 1 container Pre-chopped Mirepoix Carrots/Onions/Potatoes from Sunday Prep
  • 1 pack 12oz Never Any! Apple Chicken Sausage (sliced)
  • 2 32 oz Simply Nature Organic Chicken Broth
  • 2 15 oz Organic Pinto Beans (drained and rinsed)
  • 1 tbsp Olive Oil

Instructions

  • Sauté: Sauté your first container of pre-chopped mirepoix (carrots/onions/potatoes) in 1 tbsp oil on Level 6 (Medium) until soft (5-7 mins).
  • The Base: Slice 1 pack (approx. 12oz) Never Any! Apple Chicken Sausage and sauté with the veggies on Level 7 (Medium-High) for 3-4 mins until browned.
  • Simmer: Add 2 cartons (64oz total) organic broth and 2 cans (15oz each) of drained organic pinto beans. Bring to a boil on Level 10 (High), then reduce to Level 3 (Low Simmer).
  • Cook: Cover and simmer for 20 mins until potatoes are fork-tender.

Notes

💡 Sensory Tip: If anyone has texture sensitivities to chunks of vegetables or beans, use your immersion blender at the very end to blend the soup until smooth (remove the sausage slices first, blend, then add them back in, or blend completely for a thick bisque).

Organic Pasta Bake

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Cost $11.50

Ingredients

  • 1 box 16oz Organic Penne
  • 1 jar 24oz Simply Nature Organic Marinara
  • 1 cup Whole Milk Ricotta or Cottage Cheese
  • 1.5 cups Organic Shredded Mozzarella

Instructions

  • Boil: Pre-heat oven to 375°F. Boil 1 box organic penne in generously salted water on Level 10 (High) for 8 minutes (2 mins less than 'al dente').
  • The Smooth Sauce Hack: Empty 1 jar (24oz) organic marinara and 1 cup Ricotta into your baking dish.
  • Mix & Bake: Toss the undercooked pasta into the sauce. Top with 1.5 cups mozzarella.
  • Bake: Bake for 20 mins until bubbly and golden.

Notes

💡 Sensory Tip: Use your immersion blender directly in the baking dish to pulse the sauce and ricotta together until completely smooth. This creates a velvety “pink sauce” that hides the ricotta texture entirely.

Parent Tip: Leave about 2 inches of the bake cheese-free! This makes it easy to scoop out a “safe” portion for kids with melted cheese aversions without making a separate meal.

Organic Chicken & Green Beans

Keyword Easy Cleanup, Gluten Free, Healthy Dinner, Roasted Chicken and Green Beans, Sheet Pan Chicken
Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes
Servings 4
Cost $12.25

Ingredients

  • 1.5 – 2 lbs Simply Nature Organic Chicken Thighs or Breasts
  • 1 bag 12-16oz Organic Frozen Green Beans
  • 2-3 tbsp Olive Oil
  • Salt, Pepper, Garlic Powder (to taste)

Instructions

  • Prep: Pre-heat oven to 400°F. Line a large sheet pan with parchment or aluminum foil.
  • Layout: Place 1.5 – 2 lbs organic chicken on one side and 1 bag (12-16oz) green beans on the other.
  • Roast: Drizzle with olive oil, season with salt/pepper/garlic, and bake for 30 mins (internal temp of chicken should reach 165°F).

Notes

Texture Note: We use frozen beans here to save time and money, but be aware they roast up soft. If your family prefers a “crunchy” green bean, trade time for texture: buy fresh organic beans and spend 5 extra minutes washing/trimming them during your Sunday Prep.

Organic Meatball Subs

Keyword Brioche Rolls, Family Favorite, Grass Fed Beef, Homemade Meatballs, Kid Friendly, Meatball Subs
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 4
Calories 550kcal
Cost $14.75

Ingredients

  • Prepared Meatballs: 1 lb Organic Ground Beef + 1 tsp Italian Seasoning from Sunday Prep
  • 1/2 jar Organic Marinara
  • 1 pack Specially Selected Brioche Rolls
  • Organic Shredded Mozzarella amount to taste
  • 1 tsp Olive Oil

Instructions

  • The Meatballs: Add just 1 tsp of olive oil (or a quick spray) to a large skillet on Level 7 (Medium-High). Add your pre-rolled homemade meatballs and sauté until browned on all sides (about 5-7 mins). Carefully drain excess fat from the pan. Add 1/2 jar of organic marinara, reduce heat to Level 2-3 (Low), and simmer for 10 mins.
  • The Rolls: Preheat your broiler to High and wait until the coils are glowing orange. Slice your Specially Selected Brioche Rolls in half. Place both halves cut-side up on a baking sheet. Place on the second-highest rack (not the very top!) and broil for 45-60 seconds. Watch closely—brioche burns fast!
  • Assemble: Fill the bottom halves with meatballs and sauce. Top directly with organic mozzarella. Leave the top halves off to the side!
  • Broil: Return the open-faced bottoms to the oven for 2 mins until the cheese is melted and bubbly. Cap with the top bun and serve.

Notes

Zero Waste Tip: You’ll have about half a jar of marinara left. Freeze it for a future recipe! (Note: Don’t freeze it in the glass jar as it might crack—transfer to a freezer-safe Pyrex container or bag, leaving about an inch of space at the top for expansion.)
Parent Tip: If your child has an aversion to melted or stringy cheese, skip the mozzarella on their portion. Instead, sprinkle a little freshly grated Parmesan on their meatballs after toasting—it adds flavor without the chewy consistency!
