Ingredients

  • 1 container Pre-chopped Mirepoix Carrots/Onions/Potatoes from Sunday Prep
  • 1 pack 12oz Never Any! Apple Chicken Sausage (sliced)
  • 2 32 oz Simply Nature Organic Chicken Broth
  • 2 15 oz Organic Pinto Beans (drained and rinsed)
  • 1 tbsp Olive Oil

Instructions

  • Sauté: Sauté your first container of pre-chopped mirepoix (carrots/onions/potatoes) in 1 tbsp oil on Level 6 (Medium) until soft (5-7 mins).
  • The Base: Slice 1 pack (approx. 12oz) Never Any! Apple Chicken Sausage and sauté with the veggies on Level 7 (Medium-High) for 3-4 mins until browned.
  • Simmer: Add 2 cartons (64oz total) organic broth and 2 cans (15oz each) of drained organic pinto beans. Bring to a boil on Level 10 (High), then reduce to Level 3 (Low Simmer).
  • Cook: Cover and simmer for 20 mins until potatoes are fork-tender.

Notes

💡 Sensory Tip: If anyone has texture sensitivities to chunks of vegetables or beans, use your immersion blender at the very end to blend the soup until smooth (remove the sausage slices first, blend, then add them back in, or blend completely for a thick bisque).
