Ingredients

  • 1 container Pre-chopped Mirepoix Carrots/Onions/Potatoes from Sunday Prep
  • 1 lb Simply Nature Frozen Shrimp thawed
  • 1-2 cartons Simply Nature Organic Chicken Broth
  • 2 tbsp Butter
  • Salt and Pepper to taste

Instructions

  • The Base: In a large pot, sauté your second container of Sunday mirepoix (potatoes/carrots/onions) in 2 tbsp butter on Level 6 (Medium) for 5 mins until fragrant.
  • Simmer: Add remaining organic broth (approx. 1-2 cartons). Bring to a boil on Level 10 (High), then reduce to Level 3-4 (Simmer). Cook for 15 mins until potatoes are tender.
  • Thicken: Use your immersion blender to blend about half the soup right in the pot. This creates a creamy, thick chowder base without needing heavy cream.
  • The Finish: Stir in the remaining 1 lb thawed shrimp (from your Family Pack). Simmer on Level 3-4 (Low) for 3-4 minutes until shrimp are pink. Season with salt and pepper.
