Brown: Heat a large skillet with a lid on Level 7 (Medium-High). Brown the beef until cooked through. Drain any excess fat. Combine: Add the dry rice, salsa, broth, corn, and taco seasoning to the beef. Stir well.
Simmer: Bring to a boil, then reduce heat to Level 3 (Low). Cover tightly and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
Cheese: Remove from heat, sprinkle the cheddar cheese evenly over the top, and put the lid back on for 2 minutes to melt the cheese.
Serve: Serve hot in bowls.
